Healthy Strawberry Shortcake

Ingredients::

-¾ cup oat flour
-2 scoops Vanilla Protein Powder
-½ cup egg whites
-½ tsp baking soda
-1 tsp granulated stevia or no calorie sweetener of your choice
-1 cup unsweetened nonfat greek yogurt
-1 cup fresh strawberries, diced

Cooking Instructions

1. Preheat oven to 350 degrees F
2. Spray 4 large muffin tins with nonstick spray
3. Mix the oat flour, protein powder and baking soda
4. Add in egg whites and sweetener
5. Evenly divide batter between 4 muffin cups
6. Bake for about 7- 8 minutes
7. While shortcakes are baking, dice strawberries. When shortcakes are done, remove from the oven and allow to cool for 5 minutes. Using a knife, cut the top off the muffin and scoop out a bit of the middle to create a ‘cup’ shape. Fill cake with greek yogurt, top with strawberries and finish off with whipped cream, if desired!
