Halloween Protein Cookies
Hello Fall 🍂🍁🎃How did that happen? Fall treats are in order for this week. Soft, chewy, and delicious protein cookies made with just a few ingredients!
Ingredients:
1 cup peanut butter (or nut/seed butter of your choice)
2/3 cup granulated sweetener of choice such as stevia or monk fruit
1 large egg
1/2 cup Vanilla Protein
1/4 cup mini chocolate chips
handful of candy corn
Instructions
-Preheat your oven to 350F. Line a cookie sheet or baking tray with parchment paper and set aside.
-In a small mixing bowl, combine all your ingredients, except for the candy corn, and mix well, until just combined.
-Using your hands, form 12 balls of cookie dough and place a piece of candy corn or two on top, and place on the lined sheet.
-Bake the cookies for 11-13 minutes, or until the edges begin to brown.
-Remove from the oven and let cool on the baking sheet completely.
TO STORE: Cookies should be stored at room temperature in a sealed container for up to 2 weeks. They can also be stored in the refrigerator or freezer, to keep longer.
