No Sugar Protein Pumpkin Muffins

2 cups fashioned oats
4 scoops vanilla protein powder
1 Tbsp. pumpkin pie spice
1 Tbsp. stevia or NuNaturals Pumpkin calorie free sweetener
1 tsp. baking powder
1/4 tsp salt
1 c. milk (I used no sugar vanilla almond)
3/4 c. canned pumpkin puree
1/2 c. plain Greek yogurt
2 egg whites
Optional add ins
*mini chocolate chips *white chocolate chips *any kind of nuts!
1. Combine the dry ingredients; oats, protein powder, pumpkin pie spice, stevia, baking powder and salt.
2. In a separate bowl, whisk together the wet ingredients; milk, pumpkin, yogurt, and egg whites. Whisk until smooth and well combine.
3. Gradually add the dry ingredients to the wet ingredients, and mix until combined.
4. Lastly, fold in the chocolate chips.
5. Spoon the batter into the prepared muffin tin, filling each cup almost full. The muffins will only rise slightly, so filling a little fuller is okay.
6. Top with optional add-ins if you desire
7. Bake the muffins at 350 degrees for 28-30 minutes. Muffins should be golden brown
